Description
Hedgehog mushrooms shouldn’t be rinsed. Instead use a brush, cloth or damp paper towel to remove any particles. Lightly clean the surface, check the toothed area under the caps for uninvited guests, and trim the ends. If needed, a light brushing with a tiny bit of water will clean stubborn debris from the cap but try not to wet the underside. Store unused mushrooms in the refrigerator in a paper bag or the box they came in. Hedgehog mushrooms are excellent with meat, fish, poultry, and game birds. They’re also wonderful in sauces, soups, and sautés.
